Mmmm Homemade

The first frosts are just around the corner and with my overenthusiastic planting of tomato plants, combined with my dread of waste (I, of course, blame my parents who had me clean my plate for all the poor kids in unfortunate countries) something has to be done with the twenty plants worth of blushing tomatoes that haven’t already made it into jams, sandwiches and tupperware containers.  We use Barbecue Sauce alot for ribs, burgers, pizza bases, slowcooking stews, hence the decision to make this in enormous batches.  And it is good.  If I do say so myself.

Spicy BBQ Tomato Sauce
(the labelling was a family effort: the chili is indicative of the word spicy, because the kids couldn’t agree on the spelling and I wasn’t going to tell them.  Of course, I knew how to spell it.  Did so.)

3 kilos tomatoes, chopped
500g onions, chopped
4 large garlic cloves, chopped
15g cloves (3 teaspoons)
15g ground ginger
1/4 tsp cayenne pepper
1/3 cup salt
1 kilo raw sugar
2 1/2 cups brown vinegar

METHOD

Combine everything but the sugar and the vinegar in a large saucepan.  Bring to the boil.  Reduce heat and simmer for two hours, stirring occasionally.  Push through a sieve to seperate the mixture, retaining both.  Blend the solids with a stick blender or food processor and return to pan with the liquids.  Add the sugar and vinegar and stir over a medium heat until the sugar is dissolved.  Simmer again for about an hour until mixture thickens.  Pour into sterilised jars or bottles and seal immediately.

Makes about 10 cups.

  1. Sounds a lot like my mum’s chili sauce, except she didn’t puree hers. I can almost smell it… She’s still alive and well, but hasn’t had to make it since we stopped being young, numerous, and hungry.
